Scott’s Wheat Free – Dairy free Brownies
- 1 1/2 large sweet potatoes mashed
- 1 can coconut milk
- 1/4 cup coconut flour
- 1/4 cup tapioca flour
- 1/4 cup almond flour
- 2 tbls Agave syrup
- 3 tbls cacao powder
- 1 tsp baking soda
- 1 tbls Apple Cider Vinegar
- 2 cups Chocolate Non dairy baking chips.
- Preheat oven to 325 degrees.
Combine sweet potatoes, coconut milk, flours, syrup and powder with a hand mixer until you get a smooth consistency.
Mix in soda and vinegar. Fold in chips.
Line a baking dish with parchment and pour mixture into lined dish. Bake for 35 minutes. Let cool, slice and serve.
Yield: 12 Brownies
